Pulled "Pork" BBQ

Equipment

  • Mixing Bowl
  • Sautè Pan
  • Measuring spoons
  • 2 Forks
  • Parchment Paper

Ingredients
  

  • 4 King Oyster Mushrooms
  • 1/2 tsp Smoked Paprika
  • 1/4 tsp Salt
  • 4 cloves Garlic minced
  • 2 tbsp Olive Oil divided
  • 1/4 cup BBQ Sauce

Instructions
 

  • Clean the mushrooms with a damp paper towel.
  • Preheat the oven to 200° C
  • Using the 2 forks, pull apart the mushroom until you have shredded them to your liking.
  • Once the mushrooms are shredded, place them in a mixing bowl and add the garlic, Smoked Paprika, Salt, and ½ of the Olive Oil. Mix until everything is evenly coated.
  • Transfer all the mushrooms to a sheet pan lined with Parchment paper. Spread the mixture evenly over the pan so that the Mushrooms cook evenly.
  • Bake the Mushrooms for 18 Minutes
  • Once the Mushrooms have baked transfer them to the saute pan. Add the remaining Olive Oil and the BBQ Sauce. Saute the mixture for about 5 minutes and serve hot.

Notes

  1. I use store-bought BBQ sauce for this recipe, but you could absolutely make your own. Any kind will do, it is totally up to your taste preference.
  2. This recipe can be easily doubled, I would just add another 5 minutes to the baking time and keep a close watch to ensure the mushrooms don't burn.
