My Favorite Hummus

     My obsession with hummus has been strong for quite some time, but it really took off while I was working on 绮幻之境 -The Land of Fantasy in Hangzhou, China. During the creation of a big show there are many days that you don’t have much opportunity to leave the theater so having snacks is imperative. I started making the hummus because I wanted something healthier than the fried noodles, pizza, or Starbucks that I could get across the street. Soon other people started to join in on the hummus snack party and so I started making it twice a week. I became the unofficial hummus dealer for the creation team! I wouldn’t go so far as to say that my hummus recipe enabled the creation of the show, but it is pretty damn good. Try it for yourself and let me know what you think!!

My Favorite Hummus

A quick and easy recipe for traditional garlic hummus.

Equipment

  • blender
  • sauce pan

Ingredients
  

  • 1 can 15 ounces chickpeas, rinsed and drained
  • 1/2 tsp baking soda
  • 1/4 cup lemon juice plus more to taste
  • 3 medium-to-large cloves garlic minced
  • 1/2 tsp salt
  • 1/2 cup tahini
  • 2 tbsp extra-virgin olive oil
  • Anything else you want to add.

Instructions
 

  • Place the chickpeas in a medium saucepan and add the baking soda. Cover the chickpeas by several inches of water, then bring the mixture to a boil over high heat. Continue boiling for about 20 minutes, or until the chickpeas look bloated, their skins are falling off, and they’re quite soft. Beware, the chickpeas and baking soda have a tendency to overflow while cooking if you are using a smaller saucepan.
  • While the chickpeas are cooking mix the garlic and the lemon juice in a small bowl. The harshness of the garlic will mellow out if you let it sit in the lemon juice for 10 minutes.
  • Once the chickpeas have cooked drain them and rinse them in cold water until they are no longer hot.
  • Next, combine all the ingredients in a high powered blender or a food processor. And blend until smooth.
  • Add 1-2 tablespoons of cold water if the hummus is too thick during blending.
  • Let the hummus sit in the refrigerator for a few hours to let the flavors completely combine.
