Until about a year ago I was living on tour permanently, everything I owned was in one of two suitcases and I didn’t have a home base other than the city the show was in. While this is a pretty amazing way to see the world, it really limits the “normal” living perks you get like making breakfast whenever you want. One of the things that I missed the most while I was touring was the ability to cook. I love cooking and honestly, I’m pretty good at it, not Ratatouille good but I try.
I have had this small cafe idea rolling around in my head for quite a while, you know it’s that thing you say you will always do when you quit the thing you are doing now. For me, it has always been, “When I leave the circus, I will open a cafe and be happy.” Needless to say I have left the circus and do not have a cafe but I still daydream about it… Since we have moved to Berlin, and thanks to quarantine, I have really upped my egg game! Although I did throw away a poached egg today because I punctured it in the water, Amateur….
Anyway, EOT will be perfect! A small 5 table and seated counter with a 20 person max capacity, and like the name says I will serve eggs on toast. My specialty will be sunny side up eggs on extra toasted toast with Sriracha because that’s my favorite version, but we will also have poached and scrambled eggs as well. The menu will only have 3 egg options, 2 kinds of toast, and collections of toppings and add-ons that will change regularly. Each guest will fill out a checkbox card with their choices, everything will be made to order and will always be Instagram perfect! Of course, there will also be amazing coffee and fresh juices and everything will be reasonably priced so that you would want to come back every week. I did mention that this was a dream, right?!? And writing this makes me realize I might be a hipster….
Until I finally get the nerve to open a small cafe, I will continue to pretend at home, probably eating far too many eggs but perfecting the dishes until my dream is a reality.
