Homemade Granola

Equipment

Ingredients
  

  • 1 cup Buckwheat Groats Soaked
  • 1/2 cup Pumpkin Seeds
  • 1 cup Coconut Chips
  • 1/2 cup Almond Slices
  • 1 cup Pecan Hand Crushed
  • 1/2 cup Dried Cranberries
  • 1/4 cup Cacao Nibs
  • 1/4 cup Sesame Seeds
  • 3 tbsp Coconut Sugar
  • 3 tbsp Coconut Oil Melted

Instructions
 

  • Soak the Buckwheat Groats in warm water for at least an hour. This will allow the groats to soften.
  • Preheat the oven to 300° F (148° C)
  • Combine all ingredients, except the Groats into a large mixing bowl.
  • Strain the excess water from Buckwheat. The Groats will be a little slimy, but dont worry.
  • Add the Buckwheat Groats to the mixing bowl.
  • Mix all the ingredients together.
  • Once combined, spread the mixture evenly on a parchment lined baking tray.
  • Bake the Granola for 45-50 minutes.
  • Allow the Granola to cool completly before transfering to an air-tight storage container.

Notes

  1. You can soak the Groats longer than an hour, the longer they soak the softer they will become.
  2. If you don't have Coconut Sugar you can substitute Brown Sugar, be aware that Brown Sugar is sweeter so I would reduce the amount by a tablespoon.
  3. If you like sweeter Granola you could also add a bit of Honey or Maple Syrup, if you try this let me know how it works out in the comments.
  4. This is a base recipe, there are many many things you could add to change the flavor! Any seed, nut, or dried fruit would work well!
